Kofta pork wraps
Ingredients
- 500g pork mince
- 2 cloves garlic
- 1 tsp oregano
- 2tsp ground cumin
- 1 tsp salt
- 1 lemon
- 1 cup natural yogurt
- 1 tsp mint - chopped
- 1 tsp olive oil
- pitta breads
- baby spinach
- tomatoes
- cucumbers
Method
- In a large bowl combine the pork, garlic, oregano, cumin, salt and pepper. Finally grate the zest the lemon
- and add. Mix well.
- In a small bowl, combine the yogurt, mint and 1tsp olive oil and set aside.
- Take a large handful of the pork and persist firmly on to a skewer to form a sausage shape. Repeat for all the skewers. It should make 8.
- Heat a frying pan over a medium heat and gently fry the koftas in a little oil until cooked through.
- Serve with wraps, salad and yogurt.
