Put the bacon into a frying pan and fry until brown and crispy. Lay slices on kitchen roll to cool.
Sieve the flour into a dish, add the butter and salt.
Rub the butter into the flour.
Add the cheeses (keep a little to sprinkle on the surface), chives and the cayenne pepper powder.
Make a hole in the middle and add the beaten egg and a dash of milk. Use a knife to flip it all together and bring it together as a dough. Use more milk if needed.
Sprinkle a little flour onto the table or surface and roll the mixture to about 4cm thick, cut out circles with a scone cutter. Put them on a baking tray.
Brush the face with a dash of milk and sprinkle the remaining cheese on the surface.
Put in the oven for about 15-20 minutes.
