Slice up onion and peppers and mix into the beef with all the seasoning.
Leave to marinade for at least 20 minutes but overnight is best. Fry on a high heat and season well with salt.
Add cayenne pepper or chilli pepper for a kick but as this is child friendly I will leave it out.
Brown the marinated meat and veg over medium to high heat and season to taste.
Oil tortilla on both sides and cup over an upside down ramekin and hold in place with foil. Bake in oven 170 for 15 mins then remove and bake for 15 mins on 170, then remove foil and bake at 180 for 5 mins. Leave to cool.
Prepare the garnishes while the tortilla bakes and serve it all up and get creative.
