Salmon prawn cocktail

Ingredients

For the Marie Rose sauce:

  • mayonnaise
  • tomato ketchup
  • Worcester sauce
  • tabasco
  • smoked salmon
  • iceburg lettuce
  • avocado
  • peeled and cooked tiger prawns
  • lemon juice
  • brown bread
  • cress
  • chives

Method

  1. Mix up marie rose sauce and put in centre of large plate
  2. Chop salmon into small chunks and place in metal mould ring
  3. Add finely shredded lettuce dressed a little more sauce
  4. Top with finely diced avocado and a squeeze of lemon juice and tiger prawns sliced in half
  5. Roll out some brown bread thinly with a rolling pin and cut out your festive shapes – stocking, bell, Christmas tree and quickly toast (grill or toaster)
  6. Top with pretty cress and chives and remove metal ring to reveal a beautiful starter. Serve with your festive toast
