Bara brith pancakes

Ingredients

  • 400g self raising flour
  • 10g salt
  • 1 tea spoon baking powder
  • 50g soft brown sugar
  • 3 tsp mixed spice
  • 250g mixed dried fruit, such as raisins, currants, sultanas and cranberries
  • 1 free-range egg
  • 1 egg white
  • 150ml strong breakfast tea

Method

  1. Make a strong pot of breakfast tea and allow to cool.
  2. In a large mixing bowl place the flour, baking powder, brown sugar, salt and mixed spice.
  3. Make a well in the centre of the dry ingredients and add the eggs and 150ml of tea.
  4. Mix well to create a thick batter. If it is too thick add a drop of milk.
  5. Add the fruit and mix well.
  6. Place a heavy bottomed pan on the heat and gently cook each crempog for 2 minutes on each side until it has cooked through.
  7. Serve warm with freshly brewed tea.
