Welsh lamb pasties

Ingredients

  • 1 tbsp oil
  • 300g minced Welsh lamb
  • 1 handful fresh mint
  • 1 tbsp Worcestershire sauce
  • 2 packs ready-rolled short pastry
  • 1 egg yolk
  • 2 teaspoons cornflour
  • salt and pepper
  • 1 bag of already chopped stewing vegetables

Or

  • 1/2 small onion, cut finely
  • 1 small carrot, cut into small chunks
  • 100g peeled potatoes, and cut into a small cubes
  • 75g peeled sweet potatoes, and cut into a spot

Method

  1. Preheat the oven to 200c
  2. Simmer and drain the vegetables
  3. Fry the mincemeat until brown
  4. Add the onions, Worcester sauce and mint
  5. Add the vegetables
  6. Add 2 tablespoons cornflour and a little bit of water.
  7. Cut out 6- 8 circles of the pastry
  8. Fill a half circle with the meat mixture
  9. Brush the circle with the egg yolks and fold over.
  10. Make sure the parcel is closed and sealed.
  11. Brush the pasties with more egg wash.
  12. Cook 25- 30 minutes in a 200c oven.
