A former nurse who lives on Anglesey with her husband Bob, originally from the Rhondda. Before retiring 4 years ago, Wendy specialised in Gastroenterology and, in addition to her clinical work, worked across Wales leading on improving endoscopy services from 2008 to 2016.
The retiree started learning how to decorate cakes in the 80s. 'The first cake I made was a sponge 'guitar' for Bob in 1986. I was living in London and loved admiring the cakes in the food section of Harrods.' After completing a sugar work course, Wendy took a two-year break from nursing to concentrate on baking special cakes, winning several commissions from one of London's leading food companies, but returned to nursing after her husband was diagnosed with MS and started his treatment in the early '90s. 'Life is short and time goes fast, no chance to replay or rewind. We need to enjoy every moment as it comes - live a lot, laugh a lot and end on a happy note! One of the main things I love about Bob is that he makes me laugh every single day.'
On joining the Academy, she says: 'No one is too old to learn! I missed my chance to go on courses recently because of the pandemic. There is nothing like learning face to face - we are very lucky to have the Sweet Academy in Wales and it is a privilege to be part of it.'
Creative, competitive and a perfectionist, Wendy loves gardening, walking and listening to music - 'from pop to classical and everything in between!'.
TRIVIA: Part of a large family, Wendy is an aunt to nine nieces and nephews; a great aunt to 13 nieces and nephews; and a great, great aunt to Cedron and Gweni ('...and another little one on the way!').
