Damson Gin

Ingredients

  • Half a pound of damsons
  • Quarter pound of sugar
  • 1 Litre of gin

Method

  1. Once you've collected the damsons, you need to cut their skins to let their juices, the flavours and the gin mix together.
  2. Place in a jar before covering with the sugar and then the gin.
  3. Shake the jar.
  4. Shake the jar every now and again, and leave for a couple of months - or up to a year if you can wait that long!
