Christmas pies
FOR THE PASTRY:
100g of cold butter
225g plain flour
A pinch of salt
4 tbsp water
FOR THE FILLING:
8 turkey sausages
3 tbsp cranberry sauce
1 tbsp fresh chopped parsley
Salt and pepper
1 beaten egg
1 tbsp milk
METHOD
Step 1
Put the flour and butter in a bowl and using your hands rub the ingredients together until the mixture looks like breadcrumbs!
Add a pinch of salt to the mixture along with the water and mix with your hands until it comes together to form a dough. Add more water if the mixture is dry, a little at a time.
Wrap the dough in a film or baking paper wrap and refrigerate for half an hour.
Step 2
Carefully cut the turkey sausages down one side and place the meat in a bowl and remove the seasoning skin. Ask for parent or adult help for this step.
Mix the turkey sausage meat together and then place in a frying pan to cook the meat.
When the meat is cooked add 3 tablespoons of cranberry sauce.
Chop the fresh parsley and mix with the meat along with a little salt and pepper. This is your fill.
Step 3
While the filling is cooling take the dough from the fridge and roll using a rolling pin. Use a little flour to make sure the dough doesn't stick to the table.
Using a bowl or cup, roll the dough and use a knife to cut it around to create a circular shape. Ask for parent or adult help for this step.
Using a spoon, apply a little filling to one half of the circle.
Whip the egg and milk together and spread around the sides of the dough.
Wrap the blank half over the filling to form a half circle.
Using a forearm or finger, crimp the dough around the sides so that the filling is closed inside the dough. Here's your pie.
Step 4
Smooth the egg on top of the pie so it is covered.
Place the pie on a baking tray and bake at 180p for 45 minutes.
