Harri Alun Masterclass

Harri Alun's Lamb

Here's the challenge chef Harri Alun set for the young cooks:

Ingredients

4 bone rack of lamb

1 cup of lamb stock

1 aubergine

2 spring onion

1 lemon

50g tahini paste

10g chopped coriander

1 red pepper

50g Greek yogurt

2 sprig coriander

50g olive oil

50g butter

2 sprig thyme

2 clove garlic

200g jerusalem artichoke

100g spinach leaf

50ml rapeseed oil

Salt and pepper

method

1 Place aubergine in oven for 20 minutes

2 Trim rack of lamb off the bone

3 While aubergine is cooking, fine slice spring onion, dice red pepper, and squeeze lemon juice

4 Take artichoke, peel, cut in half then pan fry in butter with garlic and thyme and lamb stock then put in oven for about 15 minutes

5 Take aubergine out of oven, scoop out the flesh then scoop out the flesh. Add red pepper, spring onion, lemon juice, tahini paste, yoghurt, chopped coriander and season

6 Seal the lamb in a hot pan and place in oven on 180oc for approx 12 mins fat side down

Finish with butter ,garlic and thyme and rest lamb for 3 mins in warm area

7 To plate up… carve the lamb, spoon aubergine mixture, place roasted artichoke and garnish with dressed spinach leaf, picked coriander and lamb sauce

Crème Anglaise

Crème Anglaise

Ingredients

3 egg yolk

300ml cream

1 vanilla pod

35g sugar

method

1 whisk egg yolk, sugar together

2 boil cream and vanilla pod

3 pour over egg yolks

4 return to the pan to thicken constantly stirring. Do not boil

5 remove from pan to stop further cooking

​Poached Pear

Ingredients:

1 pear

200ml fruit tea

200g sugar

4 pink peppercorns

2 star anise

1/2 cinnamon stick

  • 1Puff pastry rolled out
  • method

1 Place all ingredients in a pan and cook until pear is tender

2 Leave to cool then cut pear in half

3 Remove the core

4 Press puff pastry around the pear and bake for 10-15 minutes. Place on top of granola and pour over crème anglaise .

Harri Alun's Granola

Granola Harri Alun

ingredients

100g oats

50g golden raisin

50g pumpkin seeds

50g sunflower seeds

50g flaked almonds

50g butter

100g honey

  • 1vanilla pod

Method

Mix all the ingredients and place on a baking tray

Bake at 170c until golden
